    A very specialized knife for grafting

      Most folks would not know this, but one of the unique uses for this knife with a bevel on one side is grafting fruit tree scions onto rootstock. The type of graft called whip-and-tounge requires that two flatly cut pieces of tree (scion or top part, and rootstock or bottom part) be mated together without a gap. A typical knife creates a bowed cut but the flat underside of this knife allows a very flat cut. I don't own this particular knife from Duluth but I have several I bought at a specialty Japanese tool shop in Berkeley...for about $65 each, which makes this almost too good to be true. But, if the steel is the same then the description is right: this high carbon steel looks mundane but is surgically sharp!

      An okay knife if you need a chisel blade.

        The blade is well made, for a chunk of carbon steel. Unfortunately for me, the blade angle and bevel make it a left-handed blade and I'm a righty. In addition, the blade cover is slightly larger than the handle so it is not quite the good example of Japanese craftsmanship.
